Strawberries are one of my favourite fruits. Sweet, juicy but firm and so fresh, I have loads of recipes on this blog for the strawberry lover. This Strawberry sponge cake is an even more elegant version of the same flavours. Is it cake or tart? A favourite from my childhood, this strawberry flan recipe is extremely easy to make and great for entertaining too. Lush, ripe strawberries are all piled into a sponge flan case and topped with simple jelly to hold it all together. It’s vibrant, sweet, fresh and incredibly light. Or you could just make my fruit custard tart which will give you much more room for filling. Another popular flan filling is a combination of cream or custard with fruit. The space in the flan case is first filled with whipped cream, creme patisserie (sometimes called confectioners custard), mousse, whipped custard or something similar. Then sliced or whole fruits are arranged on top. They can be covered with a sweet glaze, or just left plain. I was really pleased with this delectable strawberry cheesecake flan. It’s easy to make, can be prepared in advance, looks gorgeous, and tastes amazing! What more do you want from a recipe?! To avoid an over-stuffed pantry, I make my own self-raising flour by adding baking powder to plain flour. either version works in this sponge flan recipe. Because of the shape of a flan tin, it’s nigh on impossible to line it with baking paper. To ensure that your flan case turns out nicely, I recommend coating the inside of the tin with ‘cake release’. I had a punnet of ripe and juicy strawberries just crying out to go on top. I doubt you would have enough left to freeze anyway. Once the fruit and jelly have been added, it’s best to eat this within a day or two as the longer it sits the more moisture will soak into the sponge.
